White and Dark Chocolate Cookies

White and dark chocolate cookies are such an easy to make budget friendly treat equally at home in the cookie jar, as lunch box treats or simply over a cup of coffee or tea and good conversation.

White and Dark Chocolate Cookie Ingredients:
- 2½ Cups (375g) of Sifted Plain Flour
- 2 Cups (340g) of Dark Chocolate Chips
- 1 Cup (250g) of Softened Butter
- ¾ Cup (110g) of Chopped White Chocolate
- ½ Cup (115g) of Caster Sugar
- ½ Cup (115g) of Firmly Packed Soft Brown Sugar
- 2 Eggs
- 2 Teaspoons of Vanilla Extract
- 1 Teaspoon of Bicarbonate of Soda
- ¼ Teaspoon of Freshly Ground Sea Salt
Method:
- Melt half of the white chocolate (55g) in a double-boiler or microwave oven on Medium (70%) for one minute. Microwave in additional 10 – 20 second bursts if required
- Once the white chocolate has melted stir it until it becomes smooth then set aside to cool
- In a large mixing bowl cream together the softened butter, the caster sugar and the soft brown sugar until light and fluffy
- Add eggs, one at a time, beating well after each addition
- Beat in the melted chocolate and the vanilla extract
- In another mixing bowl combine the flour, the bicarbonate of soda and the freshly ground sea salt
- Gradually add the dry ingredients to the creamed mixture and mix well
- Stir in the dark chocolate chips
- Preheat oven to 1900C
- Drop level tablespoons of dough about 5cm (2”) apart onto non-greased baking trays
- Transfer loaded baking trays into preheated oven and bake at 1900C for 10 – 12 minutes or until golden brown
- Once cooked remove the baking trays loaded with white and dark chocolate cookies from the oven and let cool on baking trays for 1 – 2 minutes before transferring them to wire racks to cool completely
- While; the cookies are cooling, melt the remaining white chocolate (55g) in a double-boiler or microwave oven on Medium (70%) for one minute. Microwave in additional 10 – 20 second bursts if required
- Stir the melted white chocolate until it becomes smooth
- Drizzle melted white chocolate over cookies
- Let white and dark chocolate cookies sit for 5 minutes to allow the chocolate topping time to set
- Transfer finished white and dark chocolate cookies to an airtight container ready for consumption
Serving:
- These portions will yield around 3 dozen luxurious white and dark chocolate cookies
- White and dark chocolate cookies really are truly awesome when served along with beverages such as coffee, café late, Mocha, tea, milk, milkshakes etc

Note: Please note that these white and dark chocolate cookies can be stored frozen for 3 months or so
