White Chocolate Cheesecake

Serve 8-10.

16 pieces          oreo or chocolate chip cookies

50g                   butter (melted)

600g                 cream cheese

200ml               half cream / creme fraiche

200g                sugar

220g                white chocolate (melted)

20g                  corn flour

1/2 tsp             vanilla essence

3                      eggs (lightly beaten)

20g                 white chocolate (shredded, for the topping)

- heat the oven to 140 degree Celsius. line the baking tin with baking parchment.

- blend the cookies in the food processor and pour the melted butter with the motor running.

- tip the buttery crumbs into the baking tin and make it an even layer for the base. and then let it chill.

- beat together the cream cheese and half cream / creme fraiche using electric mixture. and then add the   sugar and corn flour. blend until smooth then add in melted chocolate and vanilla essence. stir in eggs and pour in the mixture into the tin.

- bake for an hour and 10mins.

* the cake maybe brown but it is still wobbly. but it is ok. just let it cool for an hour or two and preferably chill overnight. top with the shredded cheese upon serving.
