White Chocolate Chip and Hazelnut Cookies

A long-standing popular favorite; scrumptious white choc-chip and hazelnut cookies are a surprisingly easy to make budget friendly treat enjoyed by one and all.

White Choc-Chip and Hazelnut Cookies Ingredients:
- 1½ Cups (225g) of Sifted Plain Flour
- 1¼ Cups (175g) of Toasted Whole Hazelnuts
- 1 Cup (170g) of White Chocolate Chips
- ½ Cup (115g) of Caster Sugar
- ½ Cup (115g) of Firmly Packed Soft Brown Sugar
- 1 Egg
- 9 Tablespoons of Softened Butter
- 1 Teaspoon of Vanilla Extract
- ½ Teaspoon of Bicarbonate of Soda
- ½ Teaspoon of Freshly Ground Sea Salt
Method:
- Coarsely chop ½ cup (70g) of toasted whole hazelnuts and set aside
- In a small saucepan melt 2 tablespoons of butter
- In a food processor combine melted butter and remaining ¾ cup (105g) of toasted whole hazelnuts
- Cover and process until the mixture forms a crumbly paste and set aside
- In a large mixing bowl cream together the remaining 7 tablespoons of softened butter, the soft brown sugar and the caster sugar until combined
- Add the egg and vanilla extract and beat until mixture becomes light and fluffy
- Beat in ground hazelnut/butter mixture until mixture is evenly blended
- In another mixing bowl combine the sifted plain flour, the bicarbonate of soda and the freshly ground salt
- Add the combined dry ingredients to the creamed mixture and mix until just combined (don’t over mix at this stage or final result will be rubbery)
- Now stir in the white chocolate chips and the coarsely chopped hazelnuts
- Preheat oven to 1800C
- Drop tablespoons of dough 5cm (2¼”) apart onto greased baking trays
- Transfer loaded baking trays into preheated oven and bake at 1800C for 10 – 12 minutes or until lightly browned
- When cooked remove white choc-chip and hazelnut cookies from the oven and transfer to wire racks to cool
- Once completely cooled transfer white choc-chip and hazelnut cookies to an airtight container ready for consumption
Serving:
- These portions will yield around 3 dozen scrumptious white choc-chip and hazelnut cookies
- White choc-chip and hazelnut cookies are great served with beverages such as a cup of coffee, café late, Mocha, tea, glass of milk or milkshakes etc.
- They also make a great addition to a jar/plate of assorted cookies or as lunch box treats for the kids.
