White Chocolate Macadamia Cookies

The title says it all – a recipe for my scrumptious white chocolate macadamia nut cookies. Use wisely…

I am going to teach you to make a cookie that could quite possibly get you anything you want if given to the right person…

Ingredients

  • 2 1/4 cups of whole wheat flour (trust me on this one, OK?  I don’t know why these cookies break the law of all-purpose=good, but they do.)
  • 1 teaspoon baking soda
  • 1/2 measuring teaspoon of salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract (the REAL stuff if you have it…it makes everything better)
  • 2 eggs
  • 1 1/2 cups white chocolate chips. 
  • 1 cup chopped salted macadamia nuts.

Method

  1. Now, to mix it all together…
  2. Preheat oven to 350 F.  In a small bowl, stir together the flour, baking soda and salt.                                      
  3.  In a large bowl, beat the butter until creamy.  Add the sugars and vanilla extract, beat again until creamy.  Beat in eggs.  Gradually add flour mixture; mix well.  Now stir in the chopped macadamia nuts and the white chocolate.  Drop by rounded teaspoonfuls onto greased cookie sheets.  Bake 8-10 minutes. 
  4. Now eat one…go on, you know you want to!!
