Double Choc-chip and Walnut Cookies

Double choc-chip and walnut cookies are a scrumptious, budget friendly, easy to make treat ideal for cookie jars, lunch boxes or as accompaniment to beverages such as coffee, tea, milk, Milo, malted smoothies, hot chocolate, Mocha etc.

Double Choc-Chip and Walnut Cookie Ingredients:
- 1¾ Cups (260g) of Plain Flour
- 1 Cup (250g) of Softened Butter
- 1 Cup (230g) of Caster Sugar
- 1 Cup (170g) of Dark Chocolate Chips
- 1 Cup (125g) of Chopped Walnuts
- ½ Cup (115g) of Firmly Packed Brown Sugar
- ½ Cup (40g) of Cocoa Powder
- 1 Egg
- 2 Tablespoons of Milk
- 1 Teaspoon of Vanilla Extract
- ¼ Teaspoon of Baking Powder
Method:
- In a large mixing bowl cream together the softened butter, the caster sugar and soft brown sugar until light and fluffy
- Beat in the egg and the vanilla extract
- Add cocoa powder and milk and mix well
- In another mixing bowl combine the flour and the baking powder
- Add chopped walnuts and chocolate chips and stir briefly
- Fold dry ingredients into creamed mixture
- Preheat oven to 1800C
- Roll level teaspoons of dough into balls and place 5cm (2”) apart onto non-greased baking trays
- Transfer loaded baking trays to preheated oven and bake at 1800C for 10 – 12 minutes
- Once cooked let the double choc-chip and walnut cookies cool on baking trays for 5 minutes before transferring to wire racks to cool completely
- When completely cooled transfer double choc-chip and walnut cookies to an airtight container ready for consumption
Serving:
- These portions will yield around 3 dozen scrumptious double choc-chip and walnut cookies
- Double choc-chip and walnut cookies are great when served alongside beverages such as coffee, tea, milkshakes, malted smoothies or a piping hot Mocha. They also make a great addition to a mixed cookie jar/plate or as a lunch box treats.
