Easy Mochaccino Brownies

For a stronger coffee flavor, use espresso powder.

  

Preparation Time: 25 minutes plus cooling
Baking Time: about 25 minutes
Yield: 24 bars

Ingredients:
2 tablespoons instant coffee or espresso powder
½ cup butter or margarine
1 1/3 cups unsweetened chocolate
2 cups sugar
4 large eggs, lightly beaten
1 teaspoon vanilla
1 cup all-purpose flour
¼ teaspoon salt

Mochaccino Glaze
4 teaspoons instant coffee or espresso powder
2 tablespoons butter or margarine, melted
2 cups confectioners’ sugar
3 tablespoons powdered whole milk
1 teaspoon vanilla

Procedure:

1. Preheat the oven to 350° F. Grease a 13-by-9-inch baking pan.
2. Prepare brownie: In a cup, combine the coffee with 1 tablespoon very hot water and stir to dissolve. In a saucepan, heat butter and chocolate until melted, stirring frequently. Remove from heat and stir in sugar. Add eggs, vanilla, and coffee mixture. Blend well. Add flour and salt. Spread on pan.
3. Bake 25 to 30 minutes or until a toothpick inserted 2 inches from the edge comes out clean. Cool in pan.
4. Prepare glaze: In a bowl, whisk coffee with hot melted butter until dissolved. Add in sugar, milk, and vanilla. Blend until smooth.
5. Spread glaze over cooled brownie. Cut into bars.

    This will taste good with cafe latte. I can almost taste it. top it with almonds or cashew nuts…yum!
