10 Minute Spinach

Do you have spinach? Do you have 10 minutes? Then this recipe is for you!

I love cooking this on those nights when I have leftover meat but no sides. It’s simple and easy.

You need:

  • 1 bunch spinach
  • 1 clove of garlic
  • olive oil
  • salt
  • lemon juice

Heat about two tablespoons of olive oil in a skillet on medium high heat.
Meanwhile, remove stems from spinach and wash. Dry thoroughly (I use a salad spinner).
Peel and thinly slice the garlic. Sauté the garlic for 30 seconds to one minute, until light brown. Add spinach, cover, and immediately remove from heat. Let spinach wilt for maybe 2-3 minutes. (I use a frying pan with a glass lid so I can watch.)
Remove spinach from skillet and put in a serving dish. Add salt and lemon juice to taste.

    I use to do it and it’s a tasty recipe. I just don’t understand why this is in the desserts and fruits section..
