A Praise for Breakfast: Make It Even Bigger with Sausages in Tomato Sauce

A very simple to prepare specialty to make your breakfast a feast.

In my country breakfast is normally not a meal to be passed over lightly with a cup of coffee & croissant or with a bowl of cereals. Some of the “must haves” are varieties of cheese, fresh tomatoes and cucumber, tossed or hard boiled eggs, honey, varieties of jam, olives and tea, in our special tea glasses of course!

Today we as 9 to 6 working persons have no time on the weekday mornings to have a traditionally huge and detailed breakfast. Still, I personally like the concept of “having breakfast” very much so I try my best to have a decent one at least on the weekends. 

I like making the weekend breakfast a feast, staying at the table for long and eating some of this and some of that tasting a little from everything. If the weather is fine we eat at our small balcony feeling the before noon breeze and sun rays which are still not strong enough to burn us. If it is cold we get around our living room table, open the TV and watch magazine programs or a series that we have missed because of weekly rush. 

On the weekend mornings we usually get up late and have a lot of time to prepare breakfast so I try to add as many varieties as possible, some of which, I must admit, might not be very traditional like crepes or sausages in tomato sauce.

 

I used to eat sausages in tomato sauce only in hotels or restaurants and one day I decided to try it myself at home. They have quickly become one of the most loved specialties of our breakfast table. 

This delicacy is very simple to prepare but still for the ones who have never heard of it or who do not know how to make it I would like to share the recipe and also a little trick to make it much more delicious. Neither pleasure nor life need to be too complicated anyway. 

Ingredients:

  • 500 gr. sausages
  • 1 glass of water
  • 1 tablespoon of tomato paste
  • ½ tablespoon of ketchup

 How to prepare sausages in tomato sauce: 

  • Cut the sausages into little pieces, as little as you like, not smaller than 1 cm. in length. I sometimes make a cut at one or both ends of the piece of sausage, according to its length like a plus sign so that when it is cooked the ends of the sausage opens like petals of a flower.
  • Put the sausages in a pan, add the tomato paste and water over it. Stir to mix.
  • Add the ketchup. This is the trick that makes it taste like the ones in hotels. If you do not want to use ketchup you need to use some salt and pepper to season it.
  • Put the lid of the pan over, put the pan over medium heat and wait till the water reduces and the sauce thickens. I like the sauce very thick so I wait till the water nearly totally evaporates.  

So your sausages in tomato sauce are ready to serve. Enjoy!
