One medium baked potato contains 37 grams of carbohydrate—or about 10 percent of most runner’s daily needs—that readily enters the bloodstream and quickly restocks spent glycogen stores. The type of fiber in potatoes keeps your intestinal-tract muscles working and blocks a small amount of calorie absorption. In fact, research shows men and women who eat fiber from vegetables like potatoes have less body fat and smaller waists.
A single potato provides a hefty dose of potassium and 35 percent of your daily vitamin C needs. Vitamin C protects arteries from the damaging effects of cholesterol, while potassium maintains healthy blood pressure and circulation.

My Aunt ate some kind of potato, every day of her life! She lived a very healthy life, kept physically fit, and she had very, little fat.

I never had a purple potato! My mom and I were just discussing potatoes with a neighbor how they now say you can not eat the potato with a growth on it. We ate it like that and so did she and we lived. Same thing when my mom went to nmake a cake it said to not eat batter. I alwas ate batter as a child, I didn’t get food poisoning! Sorry, I digress, EXCELLENT ARTICLE!

We have baked potatoes at least once a week. I do not know what kind they are. They are large, brown and come in plastic that says baking potato. I eat the skin and everything. In fact, yesterday, Saturday, I only ate a baked potato and salad because my mom grilled filet mignon and the filet mignon was total fat. My mom offered me the other half of her baked potato becausehow I eat the whole thing but was to disgusted to eat more.
