African Cuisine: Fresh, No Oil – Simply Natural

Many of us are turning to organic foods, well, here’s a healthy recipe that requires no frying, no unnecessary spices and one that will have your taste buds gasping for more!

Serves  two.

Ingredients

1 cup of maize

1 cup of beans

1 bunch of coriander

1tomato

1 avocado

Salt to taste

Pepper if you like-(can be substituted with fresh chili)

·         Rinse the maize and beans together and put in a pot to boil till ready (1-2 hours)

·         Once ready put on your plate.

·         Clean your tomato and chop it into cubes and add to the maize and beans mixture.

·         Chop up your avocado and add to the mixture above.

·         Chop up the parsley and add to the mixture above.

·         Mix it up

·         Sprinkle salt to taste

·         Add pepper if you like.

Serve hot and ready

There you have it a simple healthy meal, tasty, fresh, and straight from one of Kenya’s many tribes.
