Almond Loaf

1 cup cooked brown rice

2 cups shredded cheddar cheese

1 cup wheat germ

1 cup chopped walnuts

1 cup chopped almonds

1 large onion, chopped

1/2 cup finely chopped green pepper

1/2 cup each shredded carrots and zucchini

5 eggs, lightly beaten

1 tablespoon soy sauce

1 tablespoon prepared mustard

1/2 teaspoon pepper

1/2 teaspoon thyme

1/2 teaspoon marjoram

1/2 teapoon sage

Combine the rice, cheese, wheat germ, walnuts, almonds, onion, green pepper, and carrots and zucchini. Mix in the eggs, soy sauce, prepared mustard, pepper, thyme, marjoram, and sage. Pat firmly into greased 9×5-inch loaf pan. Bake at 350 degrees for 55 minutes or until browned. Let stand 10 minutes then slice.
