American Apple Pie

You can’t get any more American than apple pie. This is a wonderful dish that I wish we could send to our troops abroad. Enjoy this like no other.

Ingredients

  • 1 1/4 pounds frozen shortcrust dough
  • 2 1/4 pounds tart apples
  • 1 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp grated nutmeg
  • grated rind of 1/2 orange
  • grated rind of 1/2 lemon
  • 2 tbsps yellow raisins

Method

  1. Leave the dough at room temperature for about 20 min to thaw.
  2. Rinse a 9 inch pie pan in cold water.
  3. Peel, quarter, core, and thinly slice the apples.  Place in a bowl and stir in the sugar, cinnamon, nutmeg, orange, lemon rind, and yellow raisins.
  4. Roll out the dough on a lightly floured surface, and cut out 2 circles slightly larger than the dish.  Line the dish with 1 dough circle, shaping it with your fingers and forming a rim round the edge.  Spread the apple mixture evenly over the pastry base.  Brush the edges of the dough with a little water and cover the remaining dough circle.  Seal the edges pressing down firmly with the fingertips at regular intervals.  Cut a slit in the center of the pastry for the steam to escape.
  5. Bake in a preheated oven at 400º F for 45-50 minutes or until golden brown.  Serve warm with chilled ice cream.
