Apple Main Meals

Adding apples to a main meal recipe gives that meal a delightful, unexpected taste! Try Turkey with Apple Stuffing, Pork Chop Casserole, and Orange-Apple Glazed Ribs!

Pork Chop Casserole

4 center cut pork chops

4 large cooking apples

2 tablespoons brown sugar

1 teaspoon cinnamon

2 tablespoons butter or margarine

Trim fat from chops and brown quickly in skillet over high heat.  Peel, core and slice the apples.  Place in a lightly greased casserole.  Sprinkle brown sugar and cinnamon over the apples.  Dot with butter.  Place browned pork chops on top.  Cover and bake in a 400 degree oven for 45 minutes.

Orange-Apple Glazed Ribs

4 pounds baby bake ribs, cut into pieces

1 cup apple cider

1 tablespoon brown sugar

2 teaspoons cornstarch

1/2 teaspoon ginger

1 cup orange marmalade

Place ribs in shallow pan, meaty side up.  Roast at 350 degrees for 30 minutes.  Pour off fat.  Turn oven down to 275 degrees and cook another 2 hours.  Baste every 30 minutes with the following sauce:

Combine cider, sugar, cornstarch, and ginger.  Simmer 5 minutes, stirring.  Blend in marmalade and stir until sauce is clear.

Turkey with Apple Stuffing

8 cups cubed, stale bread, crusts removed

1 large onion, chopped

1/2 cup butter, melted

3 cups chopped apples

1/2 cup raisins

1 teaspoon dried sage

1/2 cup chopped celery

2 tablespoons parsley

1 teaspoon salt

1/2 teaspoon ground pepper

White wine or apple cider

Saute onion and celery in butter until transparent.  Add apples, raisins, sage, salt, pepper, and parsley and cook another 5 minutes.  Mix with bread cubes, adding just enough wine or apple cider to moisten.  Season cavity of bird with salt and pepper.  Stuff very lightly, using any left over under neck skin.  Truss.  Roast in 325 degree oven for about 35 minutes per pound, or until leg moves readily.
