Apricot Fool

The delicious taste of fresh apricot chunks mixed in a flavorful apricot sauce makes a creamy frozen delight. Apricot fool taste great and is home made. It will take about ten minutes to make the apricot sauce and about two hours to chill before its ready to serve.
Ingredients
- 2 Tablespoons Cornflour
- 10fl oz Skimmed Milk
- 1⁄2oz low-fat Spread
- 1⁄4 Teaspoon Vanilla Extract
- 1⁄2 Teaspoon Granulated Sugar
- 14oz apricots (Fresh or Canned)
Method
Start off by making the sauce, blend the cornflour with two tablespoons of the milk in a saucepan and stir with a wooden spoon. Adding the remaining milk, bring the mixture to a boil and cook for two minutes until thickened.
Next stir in the low-fat spread, vanilla extract and sugar. Leave to cool for a few minutes. Keeping half an apricot aside for decoration, puree the rest with the juice in a blender or food processor. Remove the mixture and fold into the sauce and spoon into individual glasses. Finish this cold dessert by chilling for one to two hours and serve.
