Apricot Glazed Chicken Breast

I like chicken breast and when I eat meat this is what I usually have if I’m not having fish; however chicken can get boring unless you dress it up a little.
an apricot glaze can turn plain old chicken into a gourmet feast. Here’s how…

APRICOT GLAZED CHICKEN BREAST

Pre heat oven to 350 degrees

Lightly butter roasting pan

Wash and pat dry 4 to 6 boneless, skinless chicken breast

Sprinkle lightly with salt and pepper and place flat in roasting pan and bake for

15 minutes covered…remove from oven

While chicken is in oven

Blanch, peel and pit 4 fresh apricots and puree them in your food processor or mash fine

In a bowl combine

1/2 cup apricot preserve

1/4 cup butter melted

The pureed apricots

Juice of one lime

2 Tbsp. finely chopped parsley

2 Tbsp. ginger honey

2 tsp. garlic powder

1/2 tsp. thyme

1/2 tsp. rosemary

1/4 cup apricot juice (I have used orange and it works well)

Beat briskly until thoroughly blended

Spread apricot mixture over chicken and cover and return to oven.

Bake 10-12 more minutes.  Remove cover and bake 10-12 more minutes

or until done…thickest part of chicken should be 160 degrees and fork tender.

Remove from oven and cool for about 7 min. before serving.  Serve on a layer of

Bib lettuce and baby spinach greens with a dab of sour cream on the side topped

with finely chopped fresh apricot and a light sprinkle of finely chopped walnuts.

    A good recipe, when I cooked and ate chicken, I livened it up a bit. Sometimes I rubbed it in orange preserves and coated it with breadcrumbs.

    We love apricot. Never knew you could have it on chicken. We just usually have apricot pinwheels for Christmas with confectioners sugar sprinkled on top.
