Apricot Glazed Fennel Carrots and Goji Berries

This simple dish can be used as either an appetizer or a dessert. As its ingredients are almost all considered Super Foods it is also super healthy if you make sure to use ingredients that have been produced organically.

 

This recipe combines carrots, which are high in Pro-Vitamin A Carotenes, with antioxidant rich Goji Berries, glazed with mineral rich Apricot Preserves, and seasoned with the physically and emotionally beneficial fennel seed. Further research on the benefits of each of these ingredients will show evidence of even more health benefits in this simple and delicious dish.

5 Cups Julienned Carrots (For More Nutritional Impact Use Fresh or Frozen)

1 Cup Dried Fair Trade Organic Goji Berries

3/4 Cup Water (From The Water Used to Rehydrate The Goji Berries)

1/4 tsp. Sea Salt Freshly Ground

½ tsp. Fair Trade Organic Freshly Ground Fennel

1/4 Cup Fair Trade, Locally Made, or Homemade Organic Apricot Preserves

Ahead of time rehydrate the goji berries in enough water to have ¾ cup of this same water reserved for the next step , this will take about 20 minutes.

In medium saucepan, combine carrots, fennel, and water; bring to a boil. Reduce heat; cover and cook over medium heat 8-12 minutes or until carrots are tender, keep an eye on the clock and the carrots as you will need to add the goji berries only a minute before you remove from the heat and drain. (Cooking the goji berries longer will result in mush. Alternatively you may simply add the dried goji berries directly with the carrots and fennel, however this also may result in mushy gojis if the carrots take too long to become tender. It is your choice.) Immediately stir in sea salt and apricot preserves. Makes about 8 servings.
