Asian Recipe : Vegetable Coconut Gravy

Vegetable Coconut Gravy can be prepared and served in just 30 minutes, with the most readily available ingredients. You can enjoy the Vegetable Coconut Gravy in your own home as it is so easy to prepare.
Vegetable Coconut Gravy is an authentic Malay dish. It is a popular dish in my household as it is easy and quick to prepare. This dish serves about 6 people.
Ingredients
- 1 big tomato(diced)
- 1/2 big onion(sliced finely)
- 2 green chillies (sliced finely)
- 1 stalk of curry leaves
- 2 big potatoes (diced)
- 1/2 tsp mustard seeds
- 50 g Vermicelli ( soaked in warm water for 10 mins) optional
- 50 g green beans(sliced finely)
- 200ml coconut milk
- 400ml of water
- 1 tbsp of chilli paste
- 1 tsp of 3 in 1 paste (ground ginger, garlic & onion)
- 2 tbsp of oil
- shrimp paste 1 tsp (optional)
- salt as required

Method
- In a deep bowl , place the diced potatoes and fill with water. Add salt and microwave for 10 mins . Drain the water and set aside
- In a deep pan or wok, heat oil and fry the curry leaves, mustard seeds, onions, green chillies, tomatoes for 2 mins or until the onions turn brown
- Add the chili paste, shrimp paste and 3 in 1 paste and fry for another 5 mins
- Add the coconut milk and water and bring to boil for about 3 mins on medium heat
- Add the potatoes, vermicelli and green beans and allow to simmer in low heat until all the vegetables are cooked.
- Finally, add salt and stir
- Serve hot with steam rice.

We have a similar dish like that here in the Philippines and we call it “Ginataan”. That looks yummy! I’m sure it’s as good as our ginataan… must try it
