Do you think this a good idea?

1 large avocado juice and pulp of 1 lime

Method: Peel and pit avocado and place in a food processor or blender. Add lime, spices and garlic. Process until smooth. Serve with poached fish, grilled chicken or steamed prawns, or use as a binder for chicken or fish salad (which should be served immediately or it will turn dark). Yields about 1 1/4 cups

This recipe sounds interesting. Is there any way you can prevent the sauce from getting dark?
