Baked Acorn Squash

BAKED ACORN SQUASH.

1  acorn squash, halved and seeded

2 teaspoons plus 1 tablespoon butter or margarine 1 tablespoon dark brown sugar

3 tablespoons crushed pineapple Ground nutmeg

ј teaspoon salt

Preheat oven to 400 degrees. Grease baking dish. Place squash in baking dish and put 1 teaspoon butter or margarine and ј tablespoon sugar in each half. Cover with aluminum foil and bake for 30 to 40 minutes. Carefully scoop cooked squash out of shells, reserving shells. Mash squash and combine with 1 tablespoon butter or margarine and remaining brown sugar, pineapple, nutmeg, and salt. Fill shells and serve immediately.

Yield: 2 servings
