Banana Custard

Ingredients

  • 1 Egg (Lightly (Beaten)
  • 2 Tablespoons Custard Powder
  • 2 Tablespoons Sugar
  • 8fl oz Milk
  • 4fl oz Double Cream
  • 2 Bananas (Sliced into Discs)

Preparation

In a heat proof bowl, whisk the egg, custard powder, sugar, milk and cream until its smooth. Put the bowl over a pan of simmering water. Stir constantly over a low heat, for 5 minutes, or until the custard thickens slightly and coats the back of a wooden spoon. Remove the bowl from the heat and gently stir in the banana. Serve hot.

    Using soya milk for custard tastes really creamy and without egg and cream becomes a nice dessert without the extra calories.Using bananas that skins have speckled have more flavour too.For a change add cocoa powder to custard for that chocolately banana taste.
