Ingredients:
1/3 cup cold butter or margarine, cut into pieces
2 ½ cups biscuit mix
1 cup canned mashed sweet potato
½ cup milk
Cut the butter into the biscuit mix until the mixture becomes crumbly. Combine the sweet potato and the milk, add to the biscuit mix, stirring with a fork just until the dry ingredients become moistened.
Place the dough on a board that has been lightly floured and knead 4 or 5 times. Pat or roll the dough to ¾ inch thickness. Cut these sweet potato biscuits with a biscuit cutter and place the biscuits on a large ungreased baking sheet.
Bake for 12 minutes in a 450 degree oven.
