Broccoli and Swiss Cheese Frittata
How to make a delicious broccoli and swiss cheese frittata.
1 medium onion, chopped
2 cloves garlic, chopped
2 tablespoons margarine/butter
1 table spoon of olive or vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
4 ounces of swiss cheese
1-2 tablespoons of oregano leaves dried or fresh
2 tablespoons of shredded swiss cheese
Cook onions and garlic in margarine/oil in skillet over a medium heat for 5 minutes stirring frequently stir until onions are tender. Remove from heat and stir in broccoli
Beat eggs salt and pepper until blended together. Stir in 1 cup of cheese and oregano then pour over broccoli mix. Cover and cook over low – medium heat for 10 minutes.
Broil frittata with top 5 inches from heat for 2 minutes sprinkle in tablespoons of cheese.
