Broccoli Rice

For those of you who enjoy the vegable broccoli you might enjoy this recipe!

This is a great recipe to achiveve some veggys in your body as well as some pasta or simply drink a V8 if you wish! (The V8’s are really good if you never tried one take a chance you can’t go wrong with one! (Well for me i think this is true but you may not but anyways heres the recipe for my broccoli rice!) Enjoy!

Broccoli Rice 25 min  

Ingredients:

 

1 cup long- grain rice

3 cups broccoli florets

1 tablespoon granted parmesan cheese

1 tablespoon fresh lemon juice

¼ teaspoon salt

Black pepper to taste

 

  Directions:

  1. In a large pot (to hold the broccoli later on), Cook the rice as per the package instructions.
  2. Meanwhile, wash the broccoli and chop it into ½- inches pieces
  3. Five minutes before the rice is done, after about 15 minutes, lift the lid, quickly toss in the broccoli, and cover it back up. Do not stir since the broccoli will essentially steam on top of the rice. Cook for the remaining 5 minutes.
  4. Remove the pan from the heat and let it stand, covered , for 5 to 10 minutes, add the parmesan, lemon juice and pepper, stir to combine

Getting more fresh juice from a lemon.

 

If you heat a cold lemon either in the microwave or in hot water, you’ll get twice as much juice. Rolling and squeezing it helps too.
