Bryndzove Halusky Recipe – Slovakian National Food

Bryndzove halusky is a traditional Slovakian food that is easy to make and can be easily adapted to fit your tastes and budget. Many variations of this food can be made and you do not even have to use the traditional Slovakian commodity called bryndza.

Ingredients for 3 portions:

10-12 small or medium sized potatoes

Salt and flour

250g of bryndza and approximately 180g of molten cheese, about twice the amount of the cheese, if you do not have bryndza

Bacon for making the lards

Method:

1) Skin the potatoes and turn them into mush using shredder.

2) Add about ½ teaspoon of salt and mix the mush. Now keep adding the flour until the paste is consistent enough to keep the spoon standing when you stick it in the middle. 12-13 over the top spoons should be enough. Paste with low consistency will dissolve in water.

3) Shove the paste into the boiling water through something with holes in the bottom. Halusky (could be translated as dumplings) should not be too large and longer rather than spherical. You can also use a wooden board and knife to make them, but this will take much longer.

4) Leave them boiling for up to 5 minutes and taste one to determine whether they are done or not. Though, they should be done by that time.

5) Drain the dumplings to get rid of the water.

6) Thoroughly mix the dumplings with bryndza and molten cheese (or just one of those two) and add salt according to your tastes.

7) Prepare the lards from the tasty bacon you put aside for this purpose and put some on top of your portion before eating. You can also add a few pieces of roasted sausage.

8) Enjoy the Slovakian national food and remember that it tastes best while still fresh and hot.

To conclude, Bryndzove halusky or Slovakian dumplings with bryndza is very tasty meal that can be enjoyed as described in this recipe or in many variations. These dumplings are also popular (and cheaper) with acid (pickled) cabbage or cottage cheese. They can also be used as a side dish for pretty much anything with or without a sauce.

    I would enjoy the roasted sausage with it. Lard is tasty but so unhealthy.

    Interesting name and recipe.. sounds really good. Anything with cheese and potato I like. But I stay away from the meat.
