Butterscotch Popcorn Squares
These may have quite a bit of butter, but these are the best. My mom got the recipe many moons ago from a holiday magazine, but she makes them all year they are so good. If you haven’t guessed from my mom’s recipes I put on here I can lose a few pounds but she wants me to eat leftover cheesecake brownies and apple pie from Memorial Day! What to do?!
1/2 cup butter
10 1/2 ounce package miniature marshmallows
1 cup butterscotch flavored chips
8 cups unsalted popped popcorn such as out of an air popper
1 cup salted Spanish peanuts
1 cup raisins
In 3 quart saucepan melt butter, marshmallows and butterscotch chips over low heat, stirring often, until smooth (4 to 6 minutes about) In large bowl combine popcorn, peanuts and raisins. Pour marshmallow mixture over popcorn; stir to coat. Press into greased 13 x 9 inch pan. Cool completely; cut into bars.
