Calamansi Chicken
A succulent fried chicken with calamansi dressing.
4 chicken drumstick / wings
1 tsp turmeric powder
pinch of salt and pepper
1 tbsp oyster sauce
1 tsp sweetened soy sauce
1 tsp salted soy sauce
1 tsp sesame oil
2 nos calamansi
1 onion (sliced)
1 clove garlic (sliced)
1 inch ginger (julienne)
3 bird eye chili (sliced)
oil for frying chicken
spring onion
cilantro
red chili
method:-
- marinate the chicken with turmeric powder, half of the oyster sauce, half of sweetened soy sauce, half of sesame oil and season with salt and pepper.
- heat the oil in a frying pan and fry the chicken.
- prepare the other ingredients.
- put aside the chicken on a plate when it’s ready and in a little oil start to saute the onion till it’s golden brown.
- then put in ginger and garlic, followed by bird eye chili. let them cook till crunchy. squeeze in calamansi juice and stir them well together.
- mix together the chicken and put the remaining sweetened soy sauce, salted soy sauce, sesame oil and oyster sauce and fry them well for 2 mins.
- serve and garnish with sliced spring onion and cilantro leaves together with slice red chili.
