Chocolate Fruit Slices

Simple to make, these nutritious budget-friendly chocolate fruit slices are a treat to be savor in a multitude of ways. As a pleasant lunch-box delight, partner to accompany your favorite beverage or for dessert they are sure to please.

It can be hard to make nutritious snacks for the kids but I am sure that you will find these chocolate fruit slices to be a real winner on all fronts.

Ingredients

  • 4 Whole Grain Weet-Bix®
  • 150 Grams (5¼ Ounces) of Butter
  • 1 Cup of Sultanas
  • ½ Cup each of Wholemeal Self-Raising Flour, White Self-Raising Flour, Sugar and Shredded Coconut
  • 1 Tablespoon of Cocoa
  • 2 Teaspoons of Golden Syrup
  • Confectioners’ Sugar for dusting (optional)

Method

  1. Preheat oven to 180 degrees C, arrange an oven rack to be centrally heighted in your oven and lightly grease a baking tray. Lamington baking trays are ideal for this recipe. Yes, it is OK to use a non-stick cooking spray if you wish.
  2. Crush the Weet-Bix®. The easiest way to do this is to put the Weet-Bix® onto a large flat tray and crush them with a rolling pin one at a time. After crushing each Weet-Bix®, simply put the next one on top and crush it with the rolling pin. Repeat this process to crush all four Weet-Bix®. This will give you a pile of crushed Weet-Bix® in a range of different sized pieces, which is precisely what we want.
  3. Thoroughly sift both the wholemeal self-raising flour and the white self-raising flour into a medium-large mixing bowl then add in the cocoa, sugar and shredded coconut and mix to evenly distribute these ingredients. Now add in the sultanas and stir with a wooden sp
