DESSERT
Apple and Walnut Crumble
This delightful pudding offers seasonal walnuts that give that little bit of extra bite to an already well known and traditional dessert with a hint of white wine!
75g raisins
6 sour apples
6 tablespoons brown sugar
1.5 tablespoons lemon juice
75ml white wine
150g walnuts, roughly chopped
1.5 teaspoon cinnamon
150g cold butter
260g flour
150g sugar
butter, for the dish
- Preheat the oven to gas mark 6 / 200 degrees Cent for a fan oven. Rinse the raisins in hot water. Peel, quarter and core the apples. Then slice thinly and mix with the sugar (or honey, if you prefer), lemon juice, white wine, half the walnuts, cinnamon and raisins. Butter a baking dish and put in the apples.
- For the crumble, dice the butter. Add flour and brown sugar, then rub in well together gently, until the mixture has consistency of breadcrumbs. Sprinkle evenly on top of the apple and scatter with the remaining walnuts. Bake on the middle shelf of a preheated oven for approximately 30 minutes. Served best lukewarm.
