Courgettes Recipe

A yummy courgettes (zucchini) recipe to make anytime. It could be great for supper or a delicious breakfast to start your day. Watch out Rachel Ray!

 

Courgettes are really great.  It’s another word for zucchini fritters. Fritters are really great and make a nice main dish or side dish. This also could be a good food for you to get your kids to eat. It’s fried so they might find it tempting. It would make a good appetizer for Sunday football game day.

Great with a doll up of sour cream or perhaps some ketchup. Yum. This would rival those potato pancakes.

Zucchini (Courgettes) Fritters

2 medium zucchini, grated

1 tsp. salt

2 tbsp minced onion

2 tbsp minced parsley

1 egg, beaten

1/2 cup flour

Dash of pepper

oil

1 tsp. chopped fresh basil

1 clove garlic

Note:  I ended up using 3 zucchinis, one whole onion, 1 1/2 cup flour and four eggs to my batter.  It seemed like too much for just one egg.  You could also add shredded carrots if you want.

In colander, mix zucchini and salt, let drain 15 minutes, squeezing out excess liquid. Mix well drained zucchini (about 1 1/2 cups),  onion, parsley, basil, egg, flour, and pepper. Over medium heat, cook garlic for a minute and remove. Drop zucchini mixture by the tablespoon in 1/2 inch hot oil in skillet and fry until brown on both sides. Drain on paper. Serve hot. Yields about 12 or 14 servings.
