Cranberry Pie
We all know how healthy cranberries are. Are you tired of cranberry sauce and cranberry juice (hey, I just had cranberry sauce with my stuffed pork chops for dinner tonight!) Well know you can indulge in a cranberry pie.
1 (9 inch) pie shell baked
1 pound fresh cranberries
1 (6 1/2 ounce) drained can of pineapple chunks
1 cup pineapple juice
2 cups sugar
Juice of 1 lemon
2 Tablespoons of unflavored gelatin
whipped cream
chopped nuts
Bring all ingredients to a boil, except pie shell, whipped cream and nuts, for 10 minutes Cool. Pour into pie crust and chill. Cover with whipped cream and sprinkle with nuts.
If you are health conscious you do not have to use whipped cream and don’t put a whole can of nuts as they are fattening.
