Cream Soup with Candied Figs
Cream soup with candied figs.
Ingredients:
100 g potatoes
200 g figs
300 g zucchini
50 ml white wine
2 tablespoons olive oil
100 ml milk
1 small onion
for decoration:
4 figs
1 tablespoon brown sugar
1 tablespoon butter
4 sprigs thyme

Method:
- Onions cut into cubes and fry in olive oil for 2 minutes, add peeled and diced potatoes and everything is stewed with wine.
- Once the alcohol turn aside, add zucchini, cut into cubes too, and split figs. All stir 2-3 minutes and pour about 500 ml of water and milk.
- When vegetables are cooked, Strain and pulled away from the fire.
Figs for decoration cut in thin slices and fry for 1 minute on each side in butter. Once you pay a second time, is sprinkled with sugar and after caramelized be deducted as a plate (if left in the pan, the sugar will burning).
- When serving the soup is poured into cups and top plates are placed caramelized figs and thyme.
