Crisp Green Bean Salad

Even more delicious if you’re able to use beans freshly picked from your garden.

At the moment, here in summertime New Zealand, we have fresh beans growing profusely in our garden. This recipe can also use frozen beans. Quantities not mentioned here, adapt for your tastes and the amount you need.

INGREDIENTS

fresh green beans or frozen beans

bread slices made into croutons or walnut or pecan pieces

dressing made from cooking oil, vinegar, salt & pepper and grated or chopped onion

grated cheddar cheese or cubes of feta cheese

METHOD

Cook beans until tender. Drain and rinse under cold water.

If using croutons, cut bread into small cubes and fry in a little oil until crisp. Let drain onto a paper towel to remove excess oil.

Mix dressing ingredients above. Combine beans and croutons or walnuts or pecans. Pour dressing over and stir.

Add grated cheddar cheese or cubes of feta cheese. Mix again.

Chill in fridge until needed.

Enjoy this as an addition to a meat meal or on its own. I’m enjoying this tonight with meat cooked on the barbecue.
