Cucumber Salad Ii
A refreshing side dish or snack.

Ingredients
2-3 cucumbers, half peeled to leave lines on them, then sliced into half moons
1 peeled, chopped onion
salt, to taste
pepper, to taste
2-4 tsps apple vinegar
2-4 tsps oil (corn, olive, canola, or vegetable)
2-4 tsps of water
Directions
Mix all ingredients in a bowl. Let sit for 1-2 hours for the flavors to meld. Enjoy with a meal or on its own.
