Cut The Fat Potato Salad
This creamy potato salad has 1/4 the fat of a standard potato salad. Its a simple and tasty recipe. Serve it warm or chilled.
Ingredients:
8 new potatoes, halved
1/2 cup low fat plain yogurt
2 tbsp olive oil
2 tbsp lemon juice
2 tbsp mustard
2 green onions finely chopped
small handful chives, finely chopped
ground black pepper
Directions:
Cook potatoes until tender (about 20 minutes). Drain and cool. In a large serving bowl, whisk together the yogurt, oil, lemon juice and mustard. Season with black pepper to taste. Add most of the chives, green onions and all the potatoes and toss. Sprinkle the remainder of the onions and chives on top and serve. Serves 4.
