Delicious Mixed Berry Salad

Oh my, what a treat. Berries, and more berries – with a little whipped cream you can’t go wrong.
Ingredients
- 2/3 cup blueberries
- 2/3 cup blackcurrants
- 2/3 cup blackberries
- 2/3 cup raspberries
- 2/3 cup strawberries
- 2 tbsps sugar
- 1tbsp raspberry liqueur
- 1 cup heavy cream
- 4 mint sprigs
- 2 tsps confectioner’s sugar (optional)
Method
- Hull and pick over the redcurrants and blackcurrants. Wash and hull the other berries. Halve the strawberries. Drain on kitchen paper. Place the berries in a bowl and sprinkle over the sugar. Add the raspberry liqueur and stir gently. Cover and set aside in the refrigerator to marinate for 30 minutes.
- Lightly whip the cream. Divide the fruit equally between 4 individual dessert dishes, spoon a little cream over them, and decorate with the mint sprigs. Lightly dust with confectioner’s sugar, if liked.
Tip: Mixed Berry Salad is also delicious if served over 2 scoops of vanilla ice cream.
