Delicious Mixed Berry Salad

Oh my, what a treat. Berries, and more berries – with a little whipped cream you can’t go wrong.

Ingredients

  • 2/3 cup blueberries
  • 2/3 cup blackcurrants
  • 2/3 cup blackberries
  • 2/3 cup raspberries
  • 2/3 cup strawberries
  • 2 tbsps sugar
  • 1tbsp raspberry liqueur
  • 1 cup heavy cream
  • 4 mint sprigs
  • 2 tsps confectioner’s sugar (optional)

    Method

  1. Hull and pick over the redcurrants and blackcurrants.  Wash and hull the other berries.  Halve the strawberries.  Drain on kitchen paper.  Place the berries in a bowl and sprinkle over the sugar.  Add the raspberry liqueur and stir gently.  Cover and set aside in the refrigerator to marinate for 30 minutes.
  2. Lightly whip the cream.   Divide the fruit equally between 4 individual dessert dishes, spoon a little cream over them, and decorate with the mint sprigs.  Lightly dust with confectioner’s sugar, if liked.

Tip: Mixed Berry Salad is also delicious if served over 2 scoops of vanilla ice cream.
