Deviled-egg Eyeballs

These deviled-egg eyeballs and lightly seasoned potato ghosts will disappear before your eyes.

Ingredients

  • 1 dozen eggs
  • ¼ cup mayonnaise
  • 2 tsp mustard
  • salt
  • pepper
  • pimiento-stuffed green olive
  • ripe black olives

Direction

1. Place 1 dozen eggs in sauce pan full of water and bring to boil. Cover, reduce heat to simmer, and cook for 15 to 20 minutes. Pour out water and rinse eggs; cool. Peel eggs and cut in half lengthwise. Carefully remove yolks and place in small bowl.

2. Mash with fork and add ¼ cup mayonnaise, 2 tsp mustard, and salt and pepper to taste; spoon into egg-white halves.

3. Insert half a pimiento-stuffed green olive into center of yolk mixture for pupil. Arrange very thinly sliced strips of roasted pepper on white part of egg or veins. Cut pitted ripe black olives into slices and make eyelashes; place on eyes.

Yield: 24 halves
