Dreamy Apple Pudding

This is the most tantalizing thing you will ever put into your mouth! Every meal needs a desert and this goes above and beyond. Enjoy!

Ingredients

  • 5 cups peeled, cored, and chopped apples
  • 1 cup sugar
  • 1/2 tsp cinnamon
  • pinch of ground cardamom
  • 1/2 tsp dried lemon rind
  • 1 tbsp calvados
  • 1 tbsp butter
  • 4 eggs
  • 4 tbsp ground almonds

Method

  1. Place the apples in a pan with 3/4 cup of the sugar, the cinnamon, cardamom, and lemon rind, and cook over a low heat until soft.  Rub through a sieve, and stir in the calvados.
  2. Butter an ovenproof dish, and spoon in the apple puree.
  3. Separate the eggs.  Beat together the egg yolks and the remaining sugar until creamy.  Stir in the almonds.
  4. Whisk the egg whites until stiff, and fold into the egg yolk mixture.  Spoon over the cooked apples and smooth the top.
  5. Bake in a prehated oven at 400 degrees ferenheight fro 20 minutes or until golden brown.
