East Chicken Fried Rice

This is an easy way to use left over chicken.

This is quick and makes a nice side dish. Also goes nice with an egg roll.

Easy Chicken Fried Rice

  • 2 cups instant rice
  • 4 cups water
  • 2 tablespoons butter
  • 2 tablespoon chopped onion
  • 1 stalk celery, chopped
  • 1-2 raw eggs
  • 2-4 chopped green onions
  • 2 teaspoons soy sauce
  • 1/2-3/4 cup peas
  • 1/2 cup chopped cooked chicken
  1. Saute onions, celery and butter in a saucepan.
  2. Add water and bring to a boil.
  3. Add rice and simmer until done.
  4. Drain any excess water off.
  5. Make a well in the center of rice and drop in beaten eggs.
  6. Allow to set for a minute or two, stirring gently once or twice.
  7. Stir egg through rice.
  8. Add chicken.
  9. Add soy sauce, green onions and peas.
  10. Mix thoroughly into rice.
  11. Serve immediately.

Easy and nutritious!
