East Chicken Fried Rice
This is an easy way to use left over chicken.

This is quick and makes a nice side dish. Also goes nice with an egg roll.
Easy Chicken Fried Rice
- 2 cups instant rice
- 4 cups water
- 2 tablespoons butter
- 2 tablespoon chopped onion
- 1 stalk celery, chopped
- 1-2 raw eggs
- 2-4 chopped green onions
- 2 teaspoons soy sauce
- 1/2-3/4 cup peas
- 1/2 cup chopped cooked chicken
- Saute onions, celery and butter in a saucepan.
- Add water and bring to a boil.
- Add rice and simmer until done.
- Drain any excess water off.
- Make a well in the center of rice and drop in beaten eggs.
- Allow to set for a minute or two, stirring gently once or twice.
- Stir egg through rice.
- Add chicken.
- Add soy sauce, green onions and peas.
- Mix thoroughly into rice.
- Serve immediately.
