Easy Anti-aging Anytime Salad

Broccoli is a wonder vegetable, claim all the nutritionists alike. The sulforaphane, contained in this vegetable, protects the immune system which tends to grow weaker with age. This is a recent finding. The antioxidants and vitamins A and C revitalize the body. It slows down the aging process. This vegetable is also a good source of calcium.
Over cooking destroys the nutrients, especially the vitamins.
Vegetables do not need to be cooked for long as they have less of microbes than meat.
Salads are the best way to take vegetables with all their goodness.
The following broccoli salad can be called an anti-aging salad.
Ingredients:
· Broccoli florets(fresh and green) 1 cup
· Tomato chopped fine ½ cup
· Deseeded and finely chopped green chilli (pepper) 1
· Virgin olive oil 1 tea spoon
· Shallots (small rounded onions)chopped fine ½ cup
· Finely chopped leeks 1 table spoon
· Walnut sauce 1 table spoon
· Juice of half a lemon
· Salt
Instructions:
· Dip broccoli in boiling, salted water for a minute before cutting, to remove the impurities on the outside.
· Mix all the vegetables in a bowl.
· Add the juice of lemon.
· Add half a teaspoon of salt.
· Pour the walnut sauce and olive oil. Mix well and snack.

I love broccoli. Broccoli cheddar soup is one of my favorite. If it helps me being wrinkle free for few more years, wow, then what can be better than that, I can have it 2-3 times a week.
