Easy Potato Salad

This is another one of my yummy yet extremely simple salad ideas. Eternally popular and soooooo easy to make.

This is another of my famoily favourites and a great and easy standby for those hot summert days by the barbecue, but equally good with a steak orat the family table with fried chicken. An eternal favourite which many just can’t seem to get right. The combination of sour cream and Mayonnaise make it smooth, cool and mellow. I have never liked those very vinigary offerings from the supermarket, unless you pay for the premium ones, but who can afford that these days? Try this easy and tasty recipe you will be using time and again.

Ingredients

500g new or small potatoes, cooked and cut into bite size pieces

2 heaped tablespoon mayonnaise (low fat if you like)

2 heaped tablespoons sour cream (low fat if you like)

1/2 tsp salt

1 tsp black pepper

2tbsp chopped chives

Method

Mix all the ingredients together and serve.

It really is that easy.

You can use spring onions instead of chives but I prefer the milder flavour of the chives.
