You can either make this with meat or vegiterian. I like it with minced meat, but quantites the same without.
Serves 2
- 250g minced meat (substitute with tofu if required)
- 1 tin of chopped tomatoes
- 1 onion
- 1 clove of garlic
- salt
- coarse black pepper
- mustard
- pinch of sugar
- 2 tablets frozen spinach or 1 handful of fresh spinach
- Fry 1 chopped onion and 1 clove of chopped garlic.
- Fry the meat with 1 teaspoon of salt and a tablespoon of olive oil. exact measurements not required, but act as a good guide.
- Add the mustard immediately.
- Brown the meat and then add your spinach.
- Add about a tablespoon of crushed black pepper.
- When the meat is 90% cooked, add the tinned tomatoes and stir well.
- Simmer for about 20 minutes and add half a small glass of water if the sauce is cooking dry.
- Add a pinch of sugar to cut the acidity.
- Make some pasta and add it to the sauce when cooked. Also good with rice.
Hope you enjoy this one!
