Nutrition for the Brain

The study focused on anthocyanins in eggplant phytonutrient found in eggplant skin, called nasunin. Nasunin is a potent antioxidant and scavenger (eating) of free radicals that can protect cell membranes from damage. In animal studies, nasulin proved able to protect fat in membranes of brain cells. In brain cell membranes contain lipids that are not only responsible for protecting cells from free radicals but also for the body to absorb nutrients and dispose of the body’s metabolism.

Rich in Phenolic Antioxidant Compounds

Researchers at the American Agricultural Service in Beltsville, Maryland, found that, eggplant is a vegetable that is rich in phenolic compounds that act as antioxidants. Although eggplant vary, but in the phenolic content of all kinds are dominant, namely chlorogenic acid. In addition to being free radical, the benefits associated with chlorogenic acid as well as a potent antimutagenic (anti-cancer), anti-microbial, anti-LDL (bad cholesterol) and anti-virus.
