Eton Mess
This quintessential English dish is the tastiest, easiest to prepare dessert ever devised.
Eton Mess was created at Britain’s most famous public school, Eton College, and is traditionally served at the annual Eton “Fourth of June” celebration, which in true eccentric British style, is held on the last Wednesday in May!
This recipe is for four servings. The elements can be prepared in advance, but do not assemble the dish until it is time to serve it!
Ingredients
- 1 lb 8 oz strawberries
- 2 tsp caster sugar
- 8 fl oz whipping cream
- 8 meringue nests
Method
- Hull and chop the strawberries and put in a bowl and sprinkle the sugar over the top.
- Whip the cream in a large bowl until it forms stiff peaks (Don‘t over-whip!).
- Break up the meringues into small pieces about the size of a ladies fingernail and sprinkle them over the cream.
- Hull and chop the strawberries and fold the mixture together.
Serve, just by dolloping the mess into the dishes. If you want to be ‘cheffy’ you can add a couple of strawberries to garnish.

Notes:
If you want an alternative, the mess can be made with almost any soft fruit, including bananas.
You can replace the sugar with artificial sugar.
Instead of whipping cream, ‘Elmlea’ type alternative whipping cream or Greek yoghurt is acceptable.
