Fast Easy Fried Asian Vermicelli (Bee Hoon)

I am very keen in cooking. I love trying new recipes and improvising them. I especially like to experiment ways to prepare and cook them faster. Many of the traditional Asian recipes are tedious and time consuming. Whenever I look at mouth watering recipes online, I would be tempted to try but the long tedious process would put me off. Then I would scrutinise the recipe to see where I can take a short cut or maybe simplify or omit a step. While attempting to improvise recopies, I will always try to retain the original flavour.
This Fast Easy Asian Vermicelli is one of my short cut recipes.

Ingredients
1/2 of 500g rice vermicelli packet
3 eggs
· ½ of 12 oz packet extra firm tofu
· 3 tbsp of dried small shrimp
· 1 tbsp of (ginger /garlic paste)
· 2 tbsp of chilli paste
· 3 tbsp of soy sauce
· Salt if required
· 2 tbsp of oil

Method
1. Soak rice vermicelli in warm water with 1 tbsb of salt for 2 mins. Drain and keep aside.
2. Heat oil in deep wok or pan, add the chilli paste and ginger/ garlic paste and fry for 5 mins
3. Add the shrimps and fry for 2 min
4. Add the tofu and egg and fry for 5 mins on low heat.
5. Add the soy sauce and stir for 1 min
6. Finally add the vermicelli and fry until all the vermicelli has turned slightly red.
7. Taste. Add salt or soy sauce if needed.

Tips
I usually cut the remaining tofu into cubes; rub little salt and deep fry.
This serves as an easy snack or side dish.
Store the remaining vermicelli in a zip lock bag.
