Festive Fruit Wraps

Involving spring rolls and fruit cocktail.

Ingredients

1 can (850 g.) Fruit Cocktail, well drained (reserved syrup)
½ cup oatmeal
5 tbsp. brown sugar
2 tsp. chopped orange rind
40 pcs. small square lumpia (spring rolls) wrappers

Sauce:

1/3 cup butter
2 Tbsp. flour
¼ cup sugar
2 tbsp. fruit cocktail syrup
2 packs (125 ml. each) fruit salad Cream

Method

1. Combine the first 4 ingredients. Wrap every tablespoon of mixture in lumpia wrapper. Sprinkle with 2 tbsp. brown sugar. Fry until golden brown. Drain on paper towels. Set aside.

2. Sauce: Heat butter. Add flour, stir until well blended. Cook over low heat for 2 minutes. Add sugar, syrup and fruit salad cream. Cook while stirring for 2 minutes or until thick. Serve with festive fruit wraps.

Makes 40 pieces and 2/3 cup sauce (13 serving)
