Fish in Ginger Wine Sauce

A fish recipe with lip smacking gravy.

Ingredients:

1 pomfret fish

30g ginger

80ml white wine

100g corn flour

60ml oil

100ml stock

20g garlic

30g leek

2 bulbs spring onions

500ml plain water

Salt to taste

Method:

Steam the pomfret in flavored stock. Arrange the fish on a platter. Sauté ginger, garlic and celery in oil. Add white wine. Cook for some time. Add stock and bring it to a boil. Check for seasoning. Add corn flour to thicken the sauce. Pour the stock on the top of the fish. Garnish with spring onions and celery.
