Fresh Apple Cake

4 cups diced apples
2 cups sugar
1/2 cup cooking oil
1 cup nuts
2 eggs, well beaten
2 teaspoons vanilla
2 cups flour
2 teaspoons soda
2 teaspoons cinnamon
1 teaspoon salt
Peel, dice and shred apples. Add sugar and mix thoroughly. Add oil, nuts, eggs and vanilla. Sift dry ingredients and add: mix well. Pour into greased pan (9×13x2 inches). Bake at 350 degrees for 1 hour. If baked in pyrex pan, lower temperature to 250 degrees.
