Fresh Fruit Pizza

This is a delicious fresh fruit topping dessert on a graham cracker and cream cheese crust.

Ingredients

1. Crusts: ½ cup of powdered sugar
¾ cup of butter at room temperature
1 ½ cups of flour

2. Glaze: 2 tablespoons of cornstarch
1 cup of pineapple juice*
½ cup of sugar
1 tsp of lemon juice

3. Sauce: 8 ounces of soften cream cheese
½ cup of powdered sugar
1 teaspoon of vanilla
½ teaspoon of almond extract, optional

4. Topping: Fresh fruits

Preparation

Crust: Mix and pat in a 9″x13″ pan or a bar pan with edges and bake at 350 degrees F until edges are brown which is approximately 10-15 minutes —Cool—
Glaze: Heat corn starch, pineapple juice*, sugar and lemon juice until it boils. It will thicken as it cools.
Sauce: Mix together cream cheese, powdered sugar, vanilla and almond extract and spread on cooled crust.
Cut various fresh or canned fruits in small pieces or thin slices. I use nectarines, peaches, green grapes, cantaloupe, bananas, kiwifruit and strawberries. I also used canned pineapple tidbits drained well. *The pineapple juice from the can is used in the glaze.
Put fruits over the sauce which has been spread on the cooled crust.
