Fried Peach Shortcakes Recipe
Here is a recipe for an interesting dish that my daughter has learned to make and we enjoy as a family. It is a wonderful dessert for anyone who likes shortcakes, but doesn’t like strawberries.
Fried peach pies can be found in southern states all across the United States and this dish just adds to the taste that comes from those fried peaches and a pound cake. It is a new twist on an old favorite dish – strawberry shortcake.
INGREDIENTS
2 LARGE FIRM PEACHES
3 TABLESPOONS OF BUTTER
2 TABLESPOONS OF SUGAR
2 TABLESPOONS OF LIGHT BROWN SUGAR
1/8 TEASPOON OF GROUND CINNAMON
1/8 TEASPOON OF GROUND ALLSPICE
1 POUND CAKE, SLICED INTO SECTIONS
Begin by peeling peaches and cutting them in half. Remove seeds and pat dry.
In a large stainless steel skillet, combine butter, sugars, spices over medium heat and stir until the butter melts. . Add the peaches, cut side down, and cook until the bottoms are nicely glazed, about 2 minutes. Turn over and baste with liquid - cook another 2 minutes.
Put a slice of the poundcake into a dish, add a scoop or two of vanilla ice cream on top of the cake and pour some of the fried peaches onto the ice cream. Enjoy!
These are a delicious summertime treat when fresh peaches are easily available. This is a fairly easy recipe and very tasty! If you share these with a friend, be sure to have the recipe ready to share with them.
