Fruit Platter

This is a great snack to be passed around between family and friends

Preparation Time 20 minutes

Serves 6

Ingredients

  • 2 large oranges, peeled
  • 1 peach, stoned and sliced
  • ½ watermelon, scooped into balls
  • ½ cantaloupe melon, cut into wedges
  • ½ honeydew melon, cut into wedges
  • 225g seedless grapes
  • sprig of mint to decorate
  • For the dip
  • 100g low fat soft cheese
  • 300ml Greek style yogurt
  • 1 teaspoon grated lime rind
  • 2 tablespoons marmalade
  • 2 teaspoons crystallized ginger, finely chopped
  • 1 teaspoon grated lemon rind to decorate

Divide the oranges into segments. Arrange orange segments and other prepared fruit on a serving plate. Garnish with mint, cover with cling film and chill.

For the dip, place the cheese into a mixing bowl. Beat with a mixer until soft and fluffy. Beat in the yogurt, lime rind and marmalade until smooth. Then stir in the ginger.

Spoon dip into a bowl , cover with cling film and chill for about an hour. Garnish with lemon rind and serve with the fruit.

    Canteloupe melons are commonly known as rock melon in NZ! It can be confusing using others recipes for ingredients sometimes.Sounds delicious!
